RSS and Atom are technologies that allow you to keep track of updates to all sorts of websites, like blogs, news services, and your Etsy shop, using a "feed reader such as Mozilla Thunderbird, or Google Reader. Your feed reader checks for updates to the RSS feeds regularly and lets you know when there's something new.
